It’s the magic of the spike in blood-sugar levels, depending on our health, our gut microbes, the other things we ate before, and how recently we exercised. Two researchers fascinated by this phenomenon tried to build an algorithm that can accurately predict how someone’s blood-sugar levels will spike after eating any given meal. They included all possible variables that have an influence on our glucose levels, and succeeded to make it really accurate. It’s a remarkable development, because this algorithm could in the future provide people with personal, tailored dietary advice.
