Eben Bayer is the co-founder and CEO of Ecovative Design, a leader in the production of myco-materials, materials made from the root-like systems of fungi. According to Bayer, the food sector is the next great market for mushroom-based products.

From the “impossible burger” to bacon substitutes, mushrooms’ versatile and sustainable nature makes them the perfect alternative to traditional meat products. 

Ecovative Design, which currently produces a variety of mushroom products, such as packaging and building materials, plans to move into the food sector soon and has been collaborating with chefs to gain their place in the cuisine of the future.

Bayer believes that mushrooms will play a starring role in the future of food and maybe even space travel!
