Palm oil is in more than half of the products found in your grocery store and has been the driving force behind countless acres of clear-cut rainforests. The reason palm oil is so sought after is because of two properties: Its extremely high melting point, and its equally high saturation levels. Some oils come close to replicating one of those properties but no oil has both, until now. British scientists have created an oil from yeast that mimics both of the desirable properties of palm oil perfectly. The new oil is a result of a three-year project to find a sustainable alternative to palm oil. The scientists behind the yeast oil hope that their formula will be commercially ready within the next 4 years.
